What kinds of tea beverages can you develop?

Ready-to-drink iced teas, sparkling teas, functional teas, and alcoholic hard teas. Each style has its own process and its own flavor problems to solve.

Should I use brewed tea or tea extract in my product?

Brewed tea tastes more authentic but can vary from batch to batch. Extracts and concentrates are more consistent and easier to scale, with a little less character. Many brands blend both.

Why does bottled tea sometimes turn cloudy?

Cloudiness, often called tea cream, happens when natural tea compounds bind together as the tea cools. It's harmless, but it looks bad on a shelf. We control it through extraction methods, processing, and formulation.

Can you make an unsweetened or lightly sweetened tea?

Yes. Without sugar to hide it, though, bitterness from over-extraction is obvious in every sip. Getting the brew right matters more in an unsweetened tea than in any other style we make.

How are ready-to-drink teas processed for shelf life?

Many are hot filled, which kills microorganisms and makes the tea shelf-stable. Other options include pasteurizing after filling, or cold fill with preservatives. The method you choose limits which packaging you can use.

Can I make an alcoholic hard tea?

Yes. Hard teas are usually built on a malt or sugar brew base, and some use spirits. The base changes the taste, the tax, and where you can sell, and every alcoholic tea needs TTB label approval. This is general information, not legal or regulatory advice.
